Thai Beef Avocado Pasta Scramble

Thai Beef and Avocado Pasta

Ingredients:
- 1 pound ground beef
- 1 pound pasta
- 2 ripe avocados, peeled and diced
- 12 eggs
- 4 carrots, peeled and sliced
- 1/4 cup soy sauce
- 1/4 cup fish sauce
- 1/4 cup brown sugar
- 1 tablespoon chili paste
- 2 tablespoons vegetable oil
- 1/4 cup chopped fresh cilantro

Instructions:

1. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned and cooked through, about 8-10 minutes.

3. Add the sliced carrots to the skillet and cook for another 5 minutes.

4. In a separate bowl, whisk together the eggs, soy sauce, fish sauce, brown sugar, and chili paste.

5. Pour the egg mixture into the skillet and stir to combine with the beef and carrots. Cook until the eggs are set, about 5-7 minutes.

6. Add the cooked pasta to the skillet and stir to combine with the beef and egg mixture.

7. Gently fold in the diced avocados and chopped cilantro.

8. Serve hot and enjoy your delicious Thai Beef and Avocado Pasta!
