Garlic Shrimp Zucchini Noodles

Ketogenic Zucchini Noodles with Garlic Shrimp

- 3 medium zucchinis, spiralized
- 1 lb. shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/4 tsp. red pepper flakes (optional)
- Fresh parsley, chopped


1. Heat a large skillet over medium-high heat. Add the olive oil and garlic and cook until fragrant, about 30 seconds.

2. Add the shrimp to the skillet and cook until pink, about 2-3 minutes per side. Season with salt, pepper, and red pepper flakes (if using). Remove the shrimp from the skillet and set aside.

3. Add the zucchini noodles to the skillet and cook for 2-3 minutes, until tender. Season with salt and pepper to taste.

4. Divide the zucchini noodles between 2 plates and top with the cooked shrimp. Garnish with fresh parsley.

This dish is gluten-free and perfect for those following a ketogenic diet. The zucchini noodles are a great low-carb alternative to traditional pasta, and the garlic shrimp adds a delicious flavor. Enjoy for lunch or dinner!
