Creamy Pork Tenderloin with Roasted Vegetables

### Ingredients:
- 1 Pork Tenderloin
- 1/2 head Cauliflower, chopped
- 1/2 Celery Root, peeled and diced
- 2 tbsp Unsalted Butter
- 2 tbsp Dijon Mustard
- 3 cloves Garlic, minced
- Sea Salt and Black Pepper to taste
- Fresh Parsley, chopped
- 2 tbsp White Wine Vinegar
- 1 tsp Rosemary
- 1 tsp Oregano
- 1 cup Broccoli, chopped
- 1/2 cup Heavy Cream
- 2 tbsp Olive Oil
- 2 tbsp Cream Cheese
- 1 tbsp Whole Grain Mustard
- 1 Spanish Onion, diced
- 1/4 cup Parmesan Cheese, grated
- 1 cup Chicken Stock
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Dried Chives
- White Pepper to taste
- 1/2 tsp Xanthan Gum
### Instructions:
1. Preheat the oven to 400°F (200°C). Place the pork tenderloin on a baking sheet and season with salt, pepper, rosemary, and oregano. Roast in the oven for about 25-30 minutes or until internal temperature reaches 145°F (63°C).
2. In a large skillet, melt 1 tbsp of butter over medium heat. Add in the cauliflower, celery root, garlic, and broccoli. Sauté until the vegetables are tender.
3. In a separate saucepan, heat the olive oil and sauté the Spanish onion until translucent. Add in the chicken stock, heavy cream, cream cheese, whole grain mustard, garlic powder, onion powder, dried chives, white pepper, and xanthan gum. Stir until well combined and slightly thickened.
4. Once the pork is cooked, let it rest for a few minutes before slicing. In the skillet with the sautéed vegetables, add the remaining butter, Dijon mustard, white wine vinegar, and parsley. Mix well.
5. Serve the sliced pork tenderloin on a bed of the vegetable mixture. Drizzle the creamy sauce over the top and sprinkle with grated Parmesan cheese.
