Zucchini and Tomato Salad with Red Pepper and Onion

Ingredients:
- 2 medium-sized zucchinis, sliced
- 2 medium-sized tomatoes, diced
- 1 small onion, sliced
- 1 red pepper, sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the sliced zucchinis, diced tomatoes, sliced onion, and sliced red pepper.
3. Drizzle the olive oil and balsamic vinegar over the vegetables and toss to coat evenly.
4. Season with salt and pepper to taste.
5. Spread the vegetables evenly on a baking sheet.
6. Roast the vegetables in the oven for 20-25 minutes, or until they are tender and lightly browned.
7. Remove from the oven and let cool for a few minutes.
8. Serve the salad warm or at room temperature.
